Usually I hate amapalaya, but this salad rocks! It’s inexpensive, tasty and very healthy. The key is soaking the ampalaya in saline solution to remove the bitterness.

Un-Bitter Ampalaya Salad


  • 1 ampalaya (bitter gourd), sliced
  • Saline solution (½ tsp salt in 1 c. water)
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • 1 can tuna
  • Juice of 2 or 3 calamansi


Slice thinly. Marinate ampalaya in saline solution for 5-10 min. Drain. Mix with the rest of the ingredients.

Eat within the day if possible. Great with rice!
